
Turkey Provolone Microgreens Sandwich, Carrots, Hummus, Lemon Chia Sparkling Water

Ingredients
Sandwich
- 1 TBSP Mayonnaise
- 1 tsp Lime juice
- 2 TBSP Fresh parsley chopped
- 4 slices Sourdough bread toasted, optional
- 1 cup Microgreens
- 2 slices Provolone cheese
- 6 oz Deli turkey breast
Carrots and Hummus
- 1 cup Carrots peeled and cut into sticks, or baby carrots
- 1/3 cup Hummus
Lemon Chia Sparkling Water
- 24 oz Sparkling Water
- 4 slices Lemon
- 2 tsp Chia seeds
Instructions
- Prepare all ingredients as instructed.
- Make lime-herb mayo: In a small bowl, mix mayonnaise, lime juice, and chopped parsley. Set aside.
- Assemble sandwiches: Spread the lime-herb mayo evenly on one side of each slice of toasted sourdough. Layer with microgreens, turkey breast, and provolone cheese. Top with a second slice of bread, mayo side down, and gently press. Cut each sandwich in half.
- Combine the sparkling water, lemon and chia seeds. Stir and let sit 2 -3 minutes for the chia to bloom.
- Serve the sandwich with carrot sticks, hummus and lemon chia sparkling water.
