Turkey Bacon Avocado Sandwich, Carrot, Hummus, Pickle, Sparkling Chia Fresca

Ingredients

Sandwich

  • 2 slices Bacon
  • 4 slices Sourdough bread lightly toasted
  • 1 TBSP Mayonnaise
  • 6 leaves Romaine lettuce cut to fit the bread
  • 4 slices Tomato
  • Salt
  • Black pepper
  • 6 oz Deli turkey breast
  • 1/2 Avocado pitted and sliced

Sides

  • 1 cup Carrots peeled and cut into sticks (or use baby carrots)
  • 1/3 cup Hummus
  • 2 Pickle spears

Sparkling Chia Fresca

  • ½ cup Lemon juice fresh squeezed
  • 2 tsp Maple syrup or honey
  • ½ tsp Chia seeds
  • Pinch Salt
  • 16 oz Sparkling water
  • Fresh mint for garnish

Instructions

  • Prepare all ingredients as described above.
  • Heat a skillet over medium heat. Cook the bacon on both sides until crispy. Drain on paper towels.
  • Toast the sourdough bread to your preferred level of crispness.
  • Spread mayonnaise on one side of each toasted sourdough slice.
  • Build each sandwich: place one slice of bread (condiment side up), then layer lettuce, tomato, turkey, bacon, and avocado. Top with the second slice of bread (condiment side down). Cut in half.
  • Combine all the ingredients for the chia fresca. Stir well and let sit for 5 minutes until the chia seeds begin to bloom.
  • Serve the sandwich with carrots, hummus, pickle, and sparkling chia fresca.
