
Mexican Chicken Crust Pizza, Chips, Guacamole, Lemon Chia Sparkling Water

Ingredients
Mexican Pizza Chicken Crust
- 8 oz Ground chicken
- 1/2 cup Oat flour
- 1/2 tsp Garlic salt
Sautéed Fajita Peppers
- 1 Bell pepper sliced into thin strips
- 1 tsp Extra-virgin olive oil
- ¼ tsp Oregano
- ¼ tsp Ground cumin
Chips and Guacamole
- 1 Avocado pitted
- 2 tsp Fresh cilantro chopped
- 1 clove Garlic minced
- 1 TBSP Lime juice
- Salt to taste
- 1 oz Tortilla chips
Mexican Pizza Toppings
- 1/3 cup Salsa
- 4 oz Mexican cheese blend shredded
- 2 TBSP Black olives sliced
- 2 TBSP Greek yogurt
- 1 TBSP Fresh cilantro chopped
Lemon Chia Sparkling Water
- 4 slices Lemon
- 16 oz Sparkling water
- 2 tsp Chia seeds
Instructions
- Preheat oven to 400°F. Line a baking tray with parchment paper.
- Make the chicken crust: In a bowl, mix ground chicken, oat flour, and garlic salt until combined. Press mixture into a thin, even round (pizza shape) on a baking tray.
- Bake the crust for 15 minutes, or until firm and cooked through.
- Heat olive oil in a skillet over medium heat. Sautée sliced bell pepper in olive oil until tender. Add oregano and cumin and sautée 30 seconds. Remove from heat.
- Mash the avocado in a bowl until smooth. Stir in cilantro, garlic, and lime juice. Season with salt to taste. Refrigerate until ready to serve.
- Top the pizza: Spread salsa evenly over the pizza crust. Add sautéed fajita peppers, cheese, and black olives.
- Final bake: Return the pizza to the oven and bake for 5 more minutes, until the cheese melts. Then drizzle with greek yogurt and chopped cilantro. Portion.
- Prepare the lemon chia sparkling water: combine all the ingredients. Stir and let sit 2 - 3 minutes for the chia to bloom.
- Serve the pizza with tortilla chips, guacamole and lemon chia sparkling water.
