Ingredients

Mexican Pizza Chicken Crust

  • 8 oz Ground chicken
  • 1/2 cup Oat flour
  • 1/2 tsp Garlic salt

Sautéed Fajita Peppers

  • 1 Bell pepper sliced into thin strips
  • 1 tsp Extra-virgin olive oil
  • ¼ tsp Oregano
  • ¼ tsp Ground cumin

Chips and Guacamole

  • 1 Avocado pitted
  • 2 tsp Fresh cilantro chopped
  • 1 clove Garlic minced
  • 1 TBSP Lime juice
  • Salt to taste
  • 1 oz Tortilla chips

Mexican Pizza Toppings

  • 1/3 cup Salsa
  • 4 oz Mexican cheese blend shredded
  • 2 TBSP Black olives sliced
  • 2 TBSP Greek yogurt
  • 1 TBSP Fresh cilantro chopped

Lemon Chia Sparkling Water

  • 4 slices Lemon
  • 16 oz Sparkling water
  • 2 tsp Chia seeds

Instructions

  • Preheat oven to 400°F. Line a baking tray with parchment paper.
  • Make the chicken crust: In a bowl, mix ground chicken, oat flour, and garlic salt until combined. Press mixture into a thin, even round (pizza shape) on a baking tray.
  • Bake the crust for 15 minutes, or until firm and cooked through.
  • Heat olive oil in a skillet over medium heat. Sautée sliced bell pepper in olive oil until tender. Add oregano and cumin and sautée 30 seconds. Remove from heat.
  • Mash the avocado in a bowl until smooth. Stir in cilantro, garlic, and lime juice. Season with salt to taste. Refrigerate until ready to serve.
  • Top the pizza: Spread salsa evenly over the pizza crust. Add sautéed fajita peppers, cheese, and black olives.
  • Final bake: Return the pizza to the oven and bake for 5 more minutes, until the cheese melts. Then drizzle with greek yogurt and chopped cilantro. Portion.
  • Prepare the lemon chia sparkling water: combine all the ingredients. Stir and let sit 2 - 3 minutes for the chia to bloom.
  • Serve the pizza with tortilla chips, guacamole and lemon chia sparkling water.
