Ingredients
Vegetable Grilled Chicken Hummus Wrap
- 1 tsp Extra-virgin olive oil
- 8 oz Chicken breast boneless skinless butterflied
- Salt to taste
- Black pepper to taste
- 2 Whole wheat tortilla wraps burrito size
- 1/3 cup Hummus
- 1 cup Carrots shredded
- 1 Cucumber thinly sliced
- 1 Tomato sliced
- 1/4 cup Olives halved
- 2 TBSP Sunflower seeds
- 1/2 cup Pickle slices
- 1 cup Arugula
- 1/2 Avocado sliced
- 4 slices Parmesan cheese from a wedge
Cheese and Apple Slices
- 1 oz Your choice of cheese e.g. cheddar or brie
- 1 Apple sliced
Chamomile Tea
- 2 cups Water
- 2 Chamomile tea bags or 1 tsp loose-leaf tea per cup
Instructions
- Prep all ingredients as instructed.
- Preheat a grill or grill pan over medium heat. Drizzle oil over the chicken and season with salt and black pepper.
- Grill on both sides to an internal temperature of 160F / 71C. Set aside. Slice before using.
- Spread hummus evenly across each wrap. Layer with chicken, carrots, cucumber, tomato, olives, sunflower seeds, pickles, arugula, avocado, and parmesan cheese. Roll tightly and slice in half.
- Bring water to a boil. Pour over chamomile tea bags. Allow to steep as directed.
- Serve the wraps with cheese slices, apple slices and chamomile tea.
