
Beef, Egg, and Cheese Breakfast Sandwich, Cherries, Pineapple, Coffee

Ingredients
Greek Yogurt Chipotle Sauce
- 2 TBSP Greek yogurt
- 1 tsp Chipotle sauce (adjust for heat)
- 1 tsp Lime juice (or lemon juice)
- ½ tsp Garlic powder
- ¼ tsp Smoked paprika
- Salt to taste
Smash Beef Breakfast Sandwich
- 6 oz Ground beef grass-fed recommended
- Salt to taste
- Black pepper to taste
- Garlic powder to taste, optional
- Onion powder to taste, optional
- 1 tsp Extra-virgin olive oil
- 2 cups Baby spinach
- 4 Eggs
- 2 slices Cheddar cheese
- 4 slices Sourdough bread
Fresh Pineapple and Cherries
- 1 cup Cherries pitted if desired
- 1 cup Pineapple cut into chunks
Coffee
- Coffee brewed using your preferred method
- Creamer optional
- Sweetener optional
Instructions
- Prepare the ingredients as instructed above.
- In a small bowl, combine Greek yogurt, chipotle sauce, lime juice, garlic powder, and smoked paprika. Stir until smooth and fully combined. Taste and adjust salt or chipotle for spice level.
- Lightly season ground beef with salt, pepper, and optional spices. Portion into piles.
- Toast the bread slices until golden brown.
- Heat half of the oil in a skillet over medium heat. Add spinach and sauté until wilted (1–2 minutes). Remove and set aside.
- Increase heat to medium-high and add remaining oil. Place beef piles in the pan and smash thin with a spatula or grill press. Cook 2–3 minutes until browned and crispy, then flip.
- Immediately place a slice of cheddar on each patty after flipping. Cook for another 1–2 minutes until melted and patties are cooked through.
- Heat remaining oil n a nonstick pan over medium-low, crack in the eggs. Cook until whites are set but yolks remain runny. Season lightly with salt and pepper.
- Assemble sandwiches: Layer the bread with, sautéed spinach, smash beef patty, eggs, and top slice of bread. Cut in half if preferred.
- Brew and prepare the coffee to your liking.
- Serve sandwiches with cherries and pineapple and coffee.
