Prepare the ingredients as instructed above.
In a small bowl, combine Greek yogurt, chipotle sauce, lime juice, garlic powder, and smoked paprika. Stir until smooth and fully combined. Taste and adjust salt or chipotle for spice level.
Lightly season ground beef with salt, pepper, and optional spices. Portion into piles.
Toast the bread slices until golden brown.
Heat half of the oil in a skillet over medium heat. Add spinach and sauté until wilted (1–2 minutes). Remove and set aside.
Increase heat to medium-high and add remaining oil. Place beef piles in the pan and smash thin with a spatula or grill press. Cook 2–3 minutes until browned and crispy, then flip.
Immediately place a slice of cheddar on each patty after flipping. Cook for another 1–2 minutes until melted and patties are cooked through.
Heat remaining oil n a nonstick pan over medium-low, crack in the eggs. Cook until whites are set but yolks remain runny. Season lightly with salt and pepper.
Assemble sandwiches: Layer the bread with, sautéed spinach, smash beef patty, eggs, and top slice of bread. Cut in half if preferred.
Brew and prepare the coffee to your liking.
Serve sandwiches with cherries and pineapple and coffee.
