Ingredients

Cucumber Water

  • ½ Cucumber sliced
  • 24 oz Water
  • Ice cubes optional

Grilled Corn

  • 2 ears Corn on the cob
  • 1 tsp Butter
  • Salt to taste
  • Black pepper to taste

Spicy Southwestern Turkey & Mac

  • 4 oz Elbow macaroni
  • 1 tsp Extra-virgin olive oil
  • 1 cup Onion diced
  • 1 cup Bell pepper diced (red or green)
  • 1 clove Garlic minced
  • 8 oz Ground turkey
  • ½ tsp Ground cumin
  • ½ tsp Chili powder
  • ¼ tsp Smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Tomato paste
  • ½ cup Chicken broth or water
  • cup Cheddar cheese shredded

Watermelon

  • 4 slices Watermelon

Instructions

  • Prepare ingredients as listed.
  • Make cucumber water: Combine sliced cucumber with water in a pitcher and chill in the refrigerator while preparing other components.
  • Preheat the grill on medium heat.
  • Bring a pot of salted water to a boil and cook macaroni according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic; sauté until softened.
  • Add ground turkey, cumin, chili powder, smoked paprika, salt, and black pepper. Cook until the turkey is browned and fully cooked.
  • Stir in tomato paste and cook for 1 minute. Add chicken broth and simmer for 3–4 minutes until slightly thickened.
  • Grill the corn on all sides until nicely charred and tender.
  • Stir cooked macaroni and cheddar cheese into the turkey mixture until creamy and well combined.
  • Serve the turkey mac with grilled corn, watermelon and cucumber water .
