Ingredients

Shaleia’s Chia Seed Pudding

  • ¾ cup Almond milk
  • 2 TBSP Chia seeds
  • 1 TBSP Flaxseed
  • 1 scoop Protein powder
  • 2 tsp Maple syrup or honey
  • Ground cinnamon for sprinkling
  • ½ cup Mixed berries

Salmon Avocado Toast

  • 4 oz Sockeye salmon
  • 4 slices Sourdough bread
  • 1 Avocado ripe, mashed
  • 2 tsp Lime juice
  • Black pepper to taste
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped, optional

Coffee

  • Coffee
  • Creamer optional
  • Sweetener optional

Instructions

  • The night before, in a jar, add the almond milk and chia seeds. Shake well and refrigerate overnight. The next morning, add the flaxseed, protein powder, maple syrup or honey, and a sprinkle of cinnamon. Shake well. Top with berries.
  • Preheat the oven to 375℉ 190℃. Roast the salmon on a baking sheet to an internal temperature of 140℉ 60℃. Set aside to cool. Chop before serving.
  • Toast the bread slices until golden and crisp.
  • Mash the avocado until smooth. Mix in lime juice and pepper.
  • Spread the avocado mixture evenly over the toasted bread.
  • Top with salmon. Garnish with red onion and fresh dill, if using.
  • Brew and prepare the coffee to your liking.
  • Serve the roasted salmon avocado toast with chia seed pudding and coffee.
