Ingredients

Salad

  • 2 cups Spring mix
  • 6 slices Cucumber sliced
  • 4 Grape tomatoes halved
  • 2 TBSP Carrots peeled and shaved

Vinaigrette

  • 2 tsp Extra-virgin olive oil
  • ½ tsp Apple cider vinegar
  • ¼ tsp Dijon mustard
  • tsp Dried oregano

Pasta & Chicken

  • 4 oz Spaghetti whole wheat
  • 1 tsp Extra-virgin olive oil
  • 8 oz Chicken breast boneless skinless diced into bite-sized pieces
  • ¼ cup Onion diced
  • 2 cloves Garlic minced
  • ¼ tsp Red pepper flakes
  • 1/8 tsp Salt
  • ¼ tsp Black pepper
  • 2 cups Marinara sauce
  • 2 tsp Parmesan cheese grated

Grilled Corn

  • 2 ears Corn on the cob ends trimmed

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • Ice cubes for serving

Pear

  • 1 Pear sliced

Instructions

  • Prepare the ingredients as listed.
  • Cook the Spaghetti: Bring a large pot of salted water to a boil over high heat. Add spaghetti and cook according to the package directions until al dente. Drain the pasta and set aside.
  • Prepare the Chicken and Red Sauce: In a large skillet, heat extra-virgin olive oil over medium heat. Add the diced chicken and sauté until nicely golden on all sides.
  • Add diced onion and cook, stirring occasionally, until softened (about 3 minutes). Stir in minced garlic cloves, red pepper flakes, salt, and black pepper; cook for 1 minute until fragrant. Pour in marinara sauce and bring to a simmer, stirring occasionally until the chicken reaches an internal temperature of 160F / 71C.
  • Preheat a gril on medium heat. Grill the corn on all sides until nicely charred and tender. Cut the corn off the Cobb and fold it into the pasta.
  • Toss the cooked spaghetti into the sauce and mix well.
  • Salad: Portion the spring mix, cucumber, grape tomatoes, and shaved carrots. Set aside.
  • In a bowl, whisk together the ingredients for the vinaigrette. Drizzle over the salad.
  • Add the lemon slices to the sparkling water. Serve over ice if preferred.
  • Serve the chicken spaghetti with grated parmesan, house salad, pear, and lemon sparkling water.
