Ingredients
Shaleia's Chia Seed Pudding (Prepare the Night Before)
- ¾ cup Almond milk
- 2 TBSP Chia seeds
- 1 TBSP Flaxseed
- 1 tsp Maple syrup or honey
- 1 scoop Protein powder your choice of flavor
- Cinnamon for sprinkling
- ½ cup mixed berries
Divine Dish Homemade Maple Chicken Sausage
- 2 oz Ground chicken breast
- 2 oz Ground chicken thigh
- 1/4 tsp Dried sage rubbed
- 1/4 tsp Ground fennel seed lightly crushed
- 1/4 tsp Salt
- 1/2 tsp Black pepper
- 1/4 tsp Garlic powder
- 1/4 tsp Onion powder
- ½ tsp Maple syrup
- 1 pinch Ground nutmeg
- 1 tsp Water ice-cold
- 1 pinch Red pepper flakes optional
Divine Dish Scrambled Eggs
- 2 Eggs
- 2 Egg whites
- 1 TBSP Cottage cheese low-fat
- Black pepper to taste
- 1 tsp Extra-virgin olive oil
- Parmesan cheese grated
Breakfast Sandwiches
- 2 Protein buns split and lightly toasted
Coffee
- Coffee brewed using your preferred method
- Creamer optional
- Sweetener optional
Kimchi
- 1/2 cup Kimchi
Instructions
- In a medium bowl or airtight container, whisk together the almond milk, chia seeds, flax seed, maple syrup (or honey), and protein powder until smooth. Let sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate overnight. In the morning, portion the pudding into bowls. Sprinkle it with cinnamon and top with the mixed berries.
- In a bowl, combine the ground chicken, sage, fennel seed, salt, black pepper, garlic powder, onion powder, red pepper flakes, maple syrup, nutmeg, and water. Cover and refrigerate 2 - 4 hours or overnight. Form into patties.
- Brew and prepare the coffee to your liking.
- Heat a lightly oiled skillet over medium heat. Cook the sausage patties on both sides until browned to an internal temperature of 165°F (74°C). Set aside.
- Toast the protein buns.
- In a bowl, beat the eggs, egg whites, and cottage cheese. Heat the olive oil in a nonstick skillet over medium-low heat. Pour in the egg mixture and cook gently, stirring occasionally until softly set. Remove from the heat. Season with black pepper.
- Assemble the sandwich by placing a chicken sausage patty on the bottom half of the bun. Portion the scrambled eggs on top, sprinkled with parmesan cheese, and finish with the top bun.
- Serve the breakfast sandwiches with Shaleia's Chia Seed Pudding, kimchi, and coffee.
