Divine Dish Homemade Maple Chicken Sausage
- 2 oz Ground chicken breast
- 2 oz Ground chicken thigh
- 1/4 tsp Dried sage rubbed
- 1/4 tsp Ground fennel seed lightly crushed
- 1/4 tsp Salt
- 1/2 tsp Black pepper
- 1/4 tsp Garlic powder
- 1/4 tsp Onion powder
- ½ tsp Maple syrup
- 1 pinch Ground nutmeg
- 1 tsp Water ice-cold
- 1 pinch Red pepper flakes optional
Divine Dish Scrambled Eggs
- 1 tsp Extra virgin olive oil
- ½ cup Poblano pepper diced
- 2 cups Baby spinach
- 2 Eggs
- 2 Egg whites
- 1 TBSP Cottage Cheese low-fat
- Black pepper to taste
- 2 Whole wheat tortilla wraps
Kimchi
- ½ cup Kimchi
Berries + Chia Seeds
- 2 cups Mixed berries washed
- 2 tsp Chia seeds
Instructions
- Brew and prepare the coffee to your liking.
- In a bowl, combine the ground chicken, sage, fennel seed, salt, black pepper, garlic powder, onion powder, red pepper flakes, maple syrup, nutmeg, and water. Cover and refrigerate 2–4 hours or overnight.
- Heat a lightly oiled skillet over medium heat. Cook the sausage, breaking it up into smaller pieces until nicely browned. Add more oil if needed and sauté the poblano pepper until tender. Add the spinach and cook for 1–2 minutes, stirring, until just wilted.
- In a bowl, beat the eggs, egg whites, cottage cheese, and black pepper.
- Pour the egg mixture into the skillet and gently stir until the eggs are set.
- Warm the whole wheat wraps in a dry skillet or microwave for 15–20 seconds, just until pliable.
- Portion the egg mixture onto the wrap. Fold in the ends and roll tightly.
- Serve the breakfast wrap with kimchi, berries with chia seeds, and coffee.
