
Grilled BBQ Salmon Sandwich, White Bean Arugula Salad, Sauerkraut, Cinnamon Almond Milk

Ingredients
Homemade BBQ Sauce
- 3 TBSP Tomato paste
- 2 TBSP Apple cider vinegar
- 1 TBSP Molasses
- 2 tsp Yellow mustard
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/8 tsp Cayenne pepper
- 1/8 tsp Salt
- Black pepper
- 3 TBSP Water
Grilled Salmon Sandwich with BBQ Sauce
- 8 oz Salmon skin off, bones out
- Black pepper to taste
- 2 Protein buns
- 2 cups Arugula
White Bean and Arugula Salad
- 1½ cups Cannellini beans drained and rinsed
- 2 cups Arugula
- 3 tsp Extra-virgin olive oil
- 1 tsp Lemon juice
- 2 tsp Parmesan cheese grated
- Black pepper to taste
Sauerkraut
- 1 cup Sauerkraut
Cinnamon Almond Milk
- 16 oz Unsweetened almond milk
- ½ tsp Ground cinnamon
- Ice cubes optional
Instructions
- Prepare the ingredients as listed.
- In a saucepan, whisk all the ingredients for the bbq sauce together. Bring to a low simmer for 5 - 7 minutes. Set aside. Reserve some BBQ sauce in a separate bowl for finishing.
- Heat a grill pan or skillet over medium heat. Brush the salmon with bbq sauce and season with black pepper. Grill on both sides to an internal temperature of 145°F / 63°C.
- During the final minute, brush with the reserved BBQ sauce.
- Warm the sauerkraut in a small saucepan over low heat or serve chilled, if preferred.
- Toast the buns on the grill if desired. Place the salmon on the buns and top with arugula.
- In a bowl, combine the cannellini beans, arugula, olive oil, and lemon juice. Season with black pepper. Top with grated parmesan.
- Whisk the cinnamon and almond milk until well combined.
- Serve the grilled salmon sandwich alongside white bean and arugula salad, sauerkraut, and cinnamon almond milk.
