Assemble the Tacos: Divide the cooked beef among the warm tortillas. Top each taco with chopped fresh cilantro, diced onion, diced tomatoes, and shredded Monterey Jack cheese.
Make the Mocktail: Place all margarita mocktail ingredients into a pitcher or drink shaker. Mix until the honey is dissolved. Adjust any of the ingredients as needed to taste.
Serve the tacos with chips and guacamole, and marg mocktail.
