Prepare all ingredients as listed above.
Hard boil the eggs. Place eggs in a saucepan, cover with cold water, bring to a boil, then remove from heat, cover, and let sit for 10 to 12 minutes. Prepare an ice bath.
Cook bacon in a skillet over medium heat until crisp. Drain and crumble.
Cool the eggs in the ice bath, peel, slice lengthwise, and place yolks in a bowl.
Make the filling. Mash yolks with cream cheese, bacon (reserve some for topping), salt, and black pepper until smooth.
Fill the eggs. Spoon or pipe the yolk mixture into the whites. Top with reserved bacon, scallions, everything bagel seasoning, and paprika if desired.
Prepare chocolate croissants. Preheat the oven to 350°F. Lightly toast croissants. Melt chocolate in short microwave bursts until smooth, then spread inside and drizzle on top.
Brew and prepare the coffee to your liking.
Serve the croissant with deviled eggs, fresh fruit, and coffee.
