Prepare all ingredients as listed.
Add the cucumber slices to water and refrigerate while preparing the meal. Add ice before serving, if desired.
Preheat the grill on medium heat.
In a bowl, combine chicken, Greek yogurt, lemon juice, olive oil, garlic, oregano, paprika, and black pepper. Mix well and marinate for at least 30 minutes. Thread onto skewers.
Preheat an air fryer to 400°F (205°C).
Toss the diced potatoes with olive oil spray, garlic powder, oregano, paprika, and black pepper. Air fry for 20 minutes or until tender and golden brown, shaking halfway through.
Prepare the salad: Combine the cucumber, tomato, red onion, parsley, lemon juice in a bowl. Toss well. Set aside.
Prepare the sauce: In a bowl, combine Greek yogurt, grated cucumber, grated garlic, lemon juice, and a pinch of black pepper. Stir until smooth. Set aside.
Grill the corn on all sides until nicely charred and tender. Spread with oil and season with parmesan and black pepper.
Grill the chicken on all sides to an internal temperature of 165°F (74°C). Remove from heat and allow to rest briefly. Remove from the skewers before serving.
Portion the potatoes, grilled chicken, Greek salad, and tzatziki into a bowl. Serve with grilled corn on the cob, cantaloupe, and cucumber water.
