Prepare all ingredients as listed.
Add the watermelon, cucumber, and mint to a pitcher. Pour in the water. Lightly press the fruit and mint with a spoon to release some of their flavor. Place in the refrigerator while you prepare the meal. Serve over ice if preferred.
Preheat the grill to medium heat.
In a medium bowl, combine the diced jalapeño, fresh cilantro, coconut sugar, turmeric, cumin, curry powder, and black pepper. Add the ground turkey and gently mix until the seasonings are evenly distributed. (Avoid overmixing, as this can make the burgers dense).
Portion the turkey mixture and form into patties.
Combine the ingredients for the slaw and set aside.
In a bowl, whisk together the tahini, lemon juice, garlic, maple syrup, curry powder, fresh ginger, turmeric, cayenne. Add 1–2 TBSP water, a little at a time, until the sauce is smooth.
Grill the corn on all sides until tender and lightly charred. Rub with oil and season with pepper.
Cook the turkey patties on both sides to an internal temperature of 165°F (74°C).
Toast the protein buns on the grill.
Place the turkey burger on the bottom half of a bun. Spoon or drizzle the curry tahini sauce over the burger, top with slaw, then add the top bun.
Serve with grilled corn and watermelon-cucumber mint water.
