Prepare the ingredients as directed above.
Prepare the chicken sausage mixture. Keep the ground chicken cold. In a bowl, combine the chicken breast, chicken thigh, dried sage, ground fennel, salt, black pepper, garlic powder, onion powder, maple syrup, ice-cold water, nutmeg, and optional red pepper flakes. Mix firmly by hand for 1–2 minutes, until the mixture becomes slightly sticky. Cover and refrigerate for 2–4 hours, preferably overnight.
Preheat the oven to 400°F (204°C).Toss the potatoes with oil, garlic powder, paprika, and pepper. Cook on a baking sheet in the oven, about 20–30 minutes, tossing about halfway through, until nicely browned and tender.
Form the chicken sausage into patties. Heat a pan over medium heat, cook the sausage patties on both sides to an internal temperature of 165F /74C.
Heat the oil in an omelet pan over medium heat. Saute the onion, pepper, and mushrooms until softened. Add spinach and cook 1–2 minutes until wilted. Remove and set aside.
In a bowl beat the egg and egg whites.
Portion the vegetables into the pan. Portion the eggs, allowing them to set on the bottom, pulling up the sides with a rubber spatula to allow uncooked eggs to move underneath the omelet. Once the eggs are mostly set, add the cheese and fold in half. Cook until the cheese is melted. Repeat for remaining omelets.
Brew and prepare the coffee using your preferred method.
Serve the omelet with sausage patty, home fries with ketchup, kimchi, pear, and coffee.
