Peanut Butter Banana Chocolate Oatmeal, Fruit, Eggs, Coffee

Ingredients

Soft Boiled Eggs

  • 4 Eggs
  • Salt to taste
  • Black pepper to taste

Coffee

  • Coffee brewed using preferred method
  • Sweetener optional
  • Creamer optional

Peanut Butter Banana Chocolate Oatmeal

  • 2 cups Water
  • 1 cup Rolled oats
  • 1 TBSP Peanut butter
  • ½ cup Chocolate chips
  • 1 Banana ripe, sliced

Fruit

  • 2 cups Mixed fruit e.g. strawberries, pineapple chunks, blueberries

Instructions

  • Prepare the Soft Boiled Eggs: Bring a small pot of water to a gentle boil. Once boiling, add the eggs carefully. Reduce heat to medium and simmer for 6 minutes for soft boiled eggs with runny yolks.
  • Once done, remove the eggs and immediately place them in a bowl of cold water for 1-2 minutes to stop the cooking process. Peel the eggs and set them aside. Season with salt and pepper.
  • Brew and prepare the coffee to your liking.
  • Prepare the Oatmeal: In a medium saucepan, bring the water to a boil. Stir in the oats and peanut butter. Cook according to the directions on the package, stirring occasionally. Once tender remove from the heat. Top with chocolate chips and cover with a lid. Let sit for 5 minutes. Then stir well.
  • Portion the oatmeal and top with sliced banana.
  • Serve with fruit, soft boiled eggs and coffee.
