
Sunny Side Up Egg, Fruit and Yogurt Parfait, Half Sourdough Bagel Kimchi Grapes Coffee

Ingredients
Garlic Herb Cottage Cheese Shmear (Best made the night before)
- 1/4 cup Cottage cheese low fat
- 2 cloves Roasted garlic
- 1 tsp Extra-virgin olive oil
- 2 TBSP Fresh chives finely chopped
- Black pepper
- ¼ tsp Onion powder
- 2 tsp Fresh dill chopped
Fruit & Yogurt Parfait
- 1 cup Greek yogurt Low-fat
- 1 cup Mixed fruit such as blackberries, raspberries, strawberries, blueberries or pineapple, prepared as needed
- sprinkle Ground cinnamon optional for serving
- Honey optional for serving
Grapes
- 1 cup Grapes washed
Eggs
- 2 Eggs
- Black pepper to taste
- ½ tsp Extra-virgin olive oil
Bagel
- 1 Sourdough bagel cut in half
Coffee
- Coffee prepared using your preferred method
- Creamer optional
- Sweetener optional
Kimchi
- ½ cup Kimchi
Instructions
- Prepare the ingredients as directed.
- If making ahead, combine the cottage cheese, roasted garlic, olive oil, chives, black pepper, onion powder, and dill. Mix until well combined. Cover and refrigerate overnight optional.
- Alternate the Greek yogurt and fruit in layers into serving bowls or glasses. Sprinkle with cinnamon or add a small drizzle of honey if desired.
- Toast the bagel to your preferred level of crispness. Spread the garlic herb cottage cheese shmear evenly over the toasted halves.
- Heat the extra-virgin olive oil in a nonstick skillet over medium-low heat. Crack the eggs into the skillet. Cook until the whites are completely set and the yolks remain runny, about 3–5 minutes. Season with black pepper.
- Brew and prepare the coffee to your liking.
- Serve a sunny-side-up egg with half bagel, kimchi, grapes, yogurt parfait, and coffee.
