Belgian Protein Waffles

  • 1 cup All-purpose flour
  • 1 scoop Vanilla protein powder
  • tsp Baking powder
  • ¼ tsp Salt
  • 1 tsp Cinnamon
  • 2 Eggs
  • ¾ cup Milk
  • 1 tsp Vanilla extract
  • 1 TBSP Maple syrup
  • Nonstick spray

Whipped Yogurt Cream

  • 1/2 cup Greek Yogurt
  • 1 tsp Vanilla extract
  • 1 tsp Maple syrup

Toppings

  • 1 cup Mixed fruit (strawberries, blueberries, raspberries, or sliced banana)
  • Maple syrup

Instructions

  • Preheat a Belgian waffle maker according to the manufacturer's instructions.
  • Brew and prepare the coffee to your liking.
  • In a large bowl, whisk together the flour, protein powder, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk together the eggs, milk, vanilla extract, and maple syrup.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; a few small lumps are fine.
  • Lightly grease the waffle iron with nonstick cooking spray.
  • Pour about ¼ cup - ⅓ cup of batter into the waffle maker and cook until golden brown and crisp, about 4–6 minutes. Repeat with the remaining batter.
  • In a bowl whip the yogurt, vanilla and maple syrup until smooth.
  • Top the waffles with whipped yogurt cream, mixed fruit, and maple syrup. Serve with coffee.
