Bocadillo De Atún, Carrots, Hummus, Pickle, Watermelon, Chia Fresca

Ingredients

Bocadillo de Atún

  • 8 oz Tuna fish drained
  • 2 TBSP Mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup Olives pitted and sliced
  • 1 TBSP Fresh parsley chopped
  • Salt to taste
  • Black pepper to taste
  • 2 Sub rolls
  • 1/2 Red onion thinly sliced
  • 1 Tomato sliced
  • 1/2 cup Romaine lettuce shredded

Carrots and Hummus

  • 1 cup Carrots peeled and cut into sticks
  • 1/3 cup Hummus

Pickle

  • 2 Pickle spears

Watermelon

  • 4 slices Watermelon

Lemon Mint Chia Fresca

  • 24 oz Water
  • ¼ cup Lemon juice
  • 2 tsp Chia seeds
  • 2 TBSP Fresh mint
  • Ice cubes

Instructions

  • Prep all ingredients per the instructions above.
  • In a bowl, combine the tuna, mayonnaise, Dijon mustard, chopped olives, chopped parsley, salt, and black pepper. Mix well until evenly combined.
  • Optional: Toast the sub rolls in a toaster oven until lightly golden.
  • Layer the bottom half of each roll with shredded lettuce, sliced tomato, sliced red onion, and the tuna salad mixture. Add additional olives if desired. Cut in half if preferred.
  • Combine water, lemon juice, chia seeds, and fresh mint. Stir well and let sit for 5 minutes to allow the chia seeds to hydrate. Serve over ice.
  • Serve the bocadillo de atún with carrots and hummus, pickle, watermelon, and lemon mint chia fresca.
